1/2 cup onion, chopped
2 cups frozen mixed vegetables ( I used a mixture of green beans, carrots, and peas from Costco)
15 oz cannellini beans, drained
2 -15 oz cans dark red kidney beans, drained
3 tbsp tomato paste
28oz. can crushed tomatoes
1 24oz. jar pasta Sauce of your choice ( I used Ragu Simply Pasta Sauce Traditional flavor)
2 cloves garlic, minced
1 tsp thyme
3/4 cup small shell pasta, omit if necessary
6 cups vegetable broth
3 tbsp parsley, fresh, chopped
1 cup spinach, chopped
1 tbsp olive oil
Parmesan cheese (optional)
Salt and pepper to taste
Instructions
Turn Instant Pot to saute and pour in the 1 tbsp of olive oil and saute onion for 3-5 minutes.
Turn off Saute and pour in vegetable broth, add garlic, frozen veggies and beans. Followed by the tomato paste and crushed tomatoes and pasta sauce.
Add salt, pepper, garlic, and thyme on top.
Pour in the 3/4 cup of shell pasta and mix it all together.
Cover with the Instant Pot lid and lock into place.
Set to Manual for 6 minutes.
Allow to NR for 10 minutes and then add in the fresh parsley.
YIELD: 6 servings
