Copycat Bosco Sticks Made With Fresh Milled Flour (Quick + No Knead)

These copycat bosco sticks made with fresh milled flour are so easy to make at home! Brushed with butter and sprinkled with parmesan cheese they are a delicious snack or appetizer.

Ingredients
  

  • 2 tsp instant yeast (I use SAF brand)
  • 1 cup warm water
  • 1 tsp sugar or honey
  • 350 grams fresh milled hard white wheat flour
  • 2 tbsp olive or avocado oil
  • 1 tsp salt
  • 1 tsp diastatic malt powder optional
  • 10 string cheese sticks
  • 4 tbsp melted butter
  • grated parmesan cheese

Method
 

  1. Before you mill your flour, add yeast, water, and honey/sugar to your mixing bowl to rehydrate yeast. Add your flour and the rest of ingredients to your bowl. You can do this by hand or in a stand mixer. Both ways are easy since you're not kneading.
  2. Let rest for 10 minutes. *You can let it rest a little longer if you need to, it won't hurt it.
  3. Preheat oven to 375℉ and line a baking sheet with parchment paper.
  4. Divide dough into 10 equal pieces. Roll out to a rectangle big enough to wrap up the string cheese stick. *See pictures in post above.
    Fold the outer flaps of dough over the cheese. Pinch and seal the edges all around the cheese very well. Place it seam-side down onto the prepared baking sheet.
  5. Brush half of the melted butter on the breadsticks and bake for 13-15 minutes until lightly golden brown.
  6. Remove from oven, brush the rest of the butter on, and sprinkle with parmesan cheese.
  7. Serve as is or with your favorite marinara or other dipping sauce.
