These copycat bosco sticks made with fresh milled flour are so easy to make at home! Brushed with butter and sprinkled with parmesan cheese they are a delicious snack or appetizer.
What You’ll Need To Make These Copycat Bosco Sticks Made With Fresh Milled Flour
Fresh Milled Hard White Wheat Flour
Instant Yeast
Water
Olive/Avocado Oil
Sugar or Honey
Salt
Optional– Diastatic Malt Powder: This is great hack for achieving that beautiful golden brown crust that you expect from a pizzeria, but in your own oven!
String Cheese
Butter
Parmesan Cheese
This dough is from my Quick No Knead Fresh Milled Flour Pizza Dough recipe.
Making the dough is very straight forward. You don’t even need a mixer if you don’t want to use one. I have mixed it by hand with a Danish Dough Whisk and also used my KitchenAid Stand mixer. They’re both just as fast it just depends on your preference and what you have. You’re just mixing until it’s all incorporated.
Shaping Your Bosco Sticks
Divide the dough into 10 equal pieces. I like to do this with a scale, but if you feel comfortable eye-balling it go for it. You can either use your hand or a small rolling pin to roll dough out to a rectangle that will fit your string cheese like pictured below. The biggest tip I can offer is make sure to pinch the seam closed! Otherwise your cheese will most likely ooze out.

Copycat Bosco Sticks Made With Fresh Milled Flour (Quick + No Knead)
Ingredients
- 2 tsp instant yeast (I use SAF brand)
- 1 cup warm water
- 1 tsp sugar or honey
- 350 grams fresh milled hard white wheat flour
- 2 tbsp olive or avocado oil
- 1 tsp salt
- 1 tsp diastatic malt powder optional
- 10 string cheese sticks
- 4 tbsp melted butter
- grated parmesan cheese
Instructions
- Before you mill your flour, add yeast, water, and honey/sugar to your mixing bowl to rehydrate yeast. Add your flour and the rest of ingredients to your bowl. You can do this by hand or in a stand mixer. Both ways are easy since you're not kneading.
- Let rest for 10 minutes. *You can let it rest a little longer if you need to, it won't hurt it.
- Preheat oven to 375℉ and line a baking sheet with parchment paper.
- Divide dough into 10 equal pieces. Roll out to a rectangle big enough to wrap up the string cheese stick. *See pictures in post above.Fold the outer flaps of dough over the cheese. Pinch and seal the edges all around the cheese very well. Place it seam-side down onto the prepared baking sheet.
- Brush half of the melted butter on the breadsticks and bake for 13-15 minutes until lightly golden brown.
- Remove from oven, brush the rest of the butter on, and sprinkle with parmesan cheese.
- Serve as is or with your favorite marinara or other dipping sauce.

HOME RUN!!! Wow!!! This is my second recipe from FMF and it is the second recipe that is now on permanent rotation with my family. My husband is the biggest fan! My teen son, teen daughter, and hubs all thought they were “AMAZING”, 10/10, and “Delicious”. I made them just as your recipe shows – I didn’t have the optional Malt and I added pepperoni. I cut them into 1/4, put some on the dough, then the cheese stick, then more on top. They baked up great! I served it with jarred Ragu Kettle Cooked Marinara. The kids have games, work, and/or practices every night of the week. These are now the most requested snack! I had two left over, put them in the fridge – hubs reheated them the next day and said they were still a 9/10! Leftover and reheated. Wow. Well Done Fresh Milled Mama!!!
