If using a stand mixer, add all of your ingredients and knead with a dough hook until dough comes together. Once it comes together knead for 5 minutes. I use speed 2 on my KitchenAid.If making by hand, make a pile of your flour on the counter or in a bowl and make a well in the center and crack your eggs into it, and add oil and salt. Knead for 5-10 minutes until you have a smooth dough that feels similar to a firm ball of play-doh. Wrap dough ball in plastic wrap or leave in a covered bowl and let rest for at least 30 minutes. The dough can rest for up to 4 hours on the counter or up to 4 days in the fridge. After resting, cut dough into 4 equal pieces. This will make it easier to handle. Cover the other pieces while working with one.
Roll out your dough with a rolling pin, pasta machine roller, or roller/cutter attachment. Make sure to lightly flour your dough. This will keep it from sticking to the rollers and each other once it's cut.
Cook in boiling water for 2-3 minutes and serve with your favorite sauce or use in your favorite recipe.
