This fresh milled spelt pasta can be made by hand or in a stand mixer. It will make pasta night even better with it’s mild nutty flavor. Enjoy with your favorite sauce and a side of garlic bread!
Homemade noodles are fun to make and they taste SO much better and are better for you when you make them with fresh milled flour.
This recipe can easily be made by hand and rolled out thin and cut into noodles, cut with a manual pasta machine, or made in a stand mixer with a pasta roller/cutter attachment. I really like the 3-in-1 Pasta Roller/cutter attachment for the KitchenAid. You don’t have to swap back and forth between the roller and cutter pieces. Just roll it out to your desired thickness and run through either the spaghetti or fettuccine cutter.
When rolling and cutting your pasta you want to make sure to lightly flour your dough so it doesn’t stick to the rollers. If you don’t have enough flour on them when you cut them they will stick together and we don’t want that.
If you find they are sticking together after cutting too much to manually separate, just re-roll them and cut them again. There is a slight learning curve to homemade pasta, but I’m certain if you’re using fresh milled flour your up for it!

How Much Pasta Does This Recipe Make?
This recipe makes just over a pound of cooked pasta. Approximately 17oz. So feel free to halve the recipe or go bigger with it depending on your needs.
To compare: A 1lb. box of dry pasta from the grocery store weighs approximately 2lbs. after cooking, so for our family of 4 we double this recipe and it yields approximately 34oz. and use it in place of what we used to use in dry pasta.
What Is Spelt?
Spelt is one of the original ancient grains, alongside einkorn and emmer. It has a light, nutty flavor. It is a heirloom grain (not hybridized) and from what I’ve read, people who are gluten sensitive are able to tolerate it. Obviously I am not a doctor, so please do this at your own risk. Fresh Milled Spelt Pasta (By Hand or Mixer)
Ingredients
- 197 grams fresh milled spelt flour (approx. 2 cups)
- 2 eggs
- 28 grams avocado or olive oil (2 tbsp)
- 1/4 tsp salt
Instructions
- If using a stand mixer, add all of your ingredients and knead with a dough hook until dough comes together. Once it comes together knead for 5 minutes. I use speed 2 on my KitchenAid.If making by hand, make a pile of your flour on the counter or in a bowl and make a well in the center and crack your eggs into it, and add oil and salt. Knead for 5-10 minutes until you have a smooth dough that feels similar to a firm ball of play-doh.
- Wrap dough ball in plastic wrap or leave in a covered bowl and let rest for at least 30 minutes. The dough can rest for up to 4 hours on the counter or up to 4 days in the fridge.
- After resting, cut dough into 4 equal pieces. This will make it easier to handle. Cover the other pieces while working with one.
- Roll out your dough with a rolling pin, pasta machine roller, or roller/cutter attachment. Make sure to lightly flour your dough. This will keep it from sticking to the rollers and each other once it's cut.
- Cook in boiling water for 2-3 minutes and serve with your favorite sauce or use in your favorite recipe.
