What You’ll Need To Make Dry Pancake Mix Made With Fresh Milled Flour
Fresh Milled Soft White Wheat Flour
Sugar/Coconut Sugar
Non-Fat Dry Milk Powder/Dry Buttermilk Powder
Baking Powder
Salt
How Many Pancakes Does This Make?
A single batch makes approximately 24 pancakes if using 1/4 cup of batter per pancake. Feel free to halve, double, triple, etc. to fit your family’s needs.
What Temperature Should I Cook My Pancakes?
If using a cast iron skillet, pre-heat over medium heat and then when you’re ready to make your pancakes turn the heat to med-low. If you’re using an electric griddle heat it to 350 degrees F. Pancakes made on a cast iron skillet tend to get more brown than a griddle. I have included a picture below to show the difference.
*Since there is no oil or butter in this recipe you want to make sure to use oil or butter for frying your pancakes, even if your griddle is non-stick. If not, I found the batter would stick and I had to tear up the pancake just to flip it.

Dry Pancake Mix Made With Fresh Milled Flour (Just Add Water)
Ingredients
- 575 grams fresh milled soft white wheat flour (approx. 6 cups flour)
- 1 cup sugar or coconut sugar
- 1 cup non-fat dry milk powder or dry buttermilk powder
- 1/4 cup baking powder
- 1 tsp salt
Instructions
- Add all ingredients to a bowl or gallon ziploc bag. Mix/shake until well combined. Store in an airtight container.
How to Make Pancakes Using the Mix
- If using the whole batch add 4 cups of water to the dry mix and mix until just combined. Don't overmix.Pour 1/4 cup of batter onto your pre-heated skillet or griddle.Flip when bubbles form on the surface and pop, creating holes that stay open. Finish on the other side until golden and enjoy!
- For smaller serving (approx. 6 pancakes):Add 1 1/2 cups dry pancake mix to a bowl and add 1 cup of water. Mix until just combined. Don't overmix.Pour 1/4 cup of batter onto your pre-heated skillet or griddle.Flip when bubbles form on the surface and pop, creating holes that stay open. Finish on the other side until golden and enjoy!
