This cream of wheat made with fresh milled flour is a breakfast classic. It’s a filling breakfast that can be customized to your liking with butter, fruits, and your preferred sweetener or enjoyed as a savory dish, too!

Fresh milled cream of wheat is a great way to start your day. Since it is the whole grain and includes all 3 parts: the endosperm, bran, and the germ, it is packed full of nutrients to keep you fueled until your next meal.
A single batch of this recipe for cream of wheat made with fresh milled flour will yield 2 cups. This recipe can easily be doubled, tripled, and so on if you need more.
How To Make Cream of Wheat
I like to coarsely mill my wheat berries in my Komo Mio. I have pictured below how far I turn my hopper. You can go as fine or coarse as you’d like. This will vary with your preference and the mill you have. If you go too fine you will end up with more of a gravy….ask me how I know.
Add your coarsely milled wheat into a small to medium saucepan (depending on how big of a batch you’re making). Add in your liquid – water, milk, or both, and a pinch of salt.
Stir together and cook over medium heat while mixing with a whisk. You’ll want to stir pretty consistently so it doesn’t burn to the bottom or get clumpy. Cook until the mixture thickens and bubbles. This will be a shorter time for a single batch and it will take a little longer for larger batches.
When it’s done add your favorite add-ins.




Milk or Water?
You can use water, milk, or a combination of both for your liquid. I generally do half water and half milk. If I have a lot of milk on hand to use up, I will make it with all milk. It’s going to be all up to you and your preference. Water is more of a plain flavor, but no worries you can add butter, fruit, syrup, or anything else you’d like to flavor it. Making it with part or all milk adds a rich creaminess and flavor to it. Play around with it and see what you prefer.

So I used regular einkorn flour, I had a little bit of cinnamon and nutmeg cooked it in water, but I did it in the microwave. I just had to keep taking it out to stir. It took less than four minutes, added a little bit of syrup and a little bit of oat milk to it and I even added a little bit of pineapple extract and it tasted just like a pudding. It was so beautiful. It was so good creamy wonderful I love this. Thank you.

Yum! This is so good! I used spelt berries. I cooked in water because I didn’t have any milk. Next time I’ll try 1/2 water and half milk. Butter and brown sugar

I grew up with the boxed cream of wheat, but this was incredibly simple and so filling. I used spelt, milk and a little cane sugar. So much better than my memories.

I’m going to try this in the morning! I made it once without any recipe and it turned out great. I made it again and it ended up being a very gloopy gravy consistency that I just threw away LOL. So, I don’t have to ask you how you know, cause I about gagged on it myself LOL. Glad to know it was purely the fact I just ground it too fine lol.

This was so good! I loved cream of wheat as a kid and this is so much better! I used spelt, all milk for my liquid and served with maple syrup. Such a great filling breakfast on a cold winter morning.

Thank you so much for sharing all these wonderful recipes. I tried this recipe and milled my berries on the coarse setting, but after boiling it it had the gravy texture. I don’t know what I did wrong.
Maybe it needs to be coarser?
