Pecan Pie Bars Made With Fresh Milled Flour

These pecan pie bars made with fresh milled flour are an easy alternative to a traditional pecan pie and go further when baking for a crowd! The delicious gooey filling sits on a buttery shortbread crust creating a crowd-pleasing treat.

Ingredients
  

Shortbread Crust
  • 226 grams butter, melted (2 sticks, can be salted or unsalted)
  • 100 grams sugar (1 cup)
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 240 grams fresh milled soft white wheat flour (approx. 2 1/2 cups)
Filling
  • 4 eggs
  • 147 grams brown sugar (2/3 cup)
  • 400 grams corn syrup or maple syrup (1 1/4 cup)
  • 60 grams heavy whipping cream (1/4 cup)
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 48 grams fresh milled soft white wheat flour (approx. 1/2 cup)
  • 1 1/2 cups coarsely chopped pecans

Method
 

For Crust
  1. Preheat the oven to 325℉ and line a glass 9×13 pan with parchment paper.
  2. In a medium bowl mix the melted butter, sugar, vanilla, and salt together. Stir in the flour until completely combined.
  3. Press dough evenly into the prepared pan. Bake 22-25 minutes until edges are lightly golden.
For Filling
  1. While the crust is baking make the filling. In a large bowl whisk the brown sugar, corn/maple syrup, heavy whipping cream, eggs, and vanilla until smooth.
  2. Next add in the flour and salt and whisk until combined. Stir in the pecans.
  3. When the crust is done remove from the oven and turn up the oven to 350℉.
  4. Pour the filling mixture over the hot crust and bake for 30-35 minutes until the center is set and the edges are golden.
  5. Cool completely before slicing.
