Do I Have To Use Corn Syrup?
No, you can use maple syrup as an equal substitute in these pecan pie bars! I did a side by side comparison of a pan made with corn syrup and a pan made with maple syrup. The pan of pecan pie bars made with corn syrup had a thicker mouth feel and a milder sweetness than the maple syrup bars. The pan made with maple syrup had more of an ooey gooey soft texture (which I prefer) and a delicious hint of maple flavor. Both the corn syrup and maple syrup bars set up well and kept their shape when cut and served. It really comes down to what you have on hand or prefer to use as both options work great!








Can I Make Pecan Pie Bars Ahead Of Time?
Yes! Since these need to cool before slicing these are perfect to make the night before the day you need them. You can leave them uncut in the pan and cover them and put them in the fridge. When you’re ready to eat them take them out, cut, and serve!
Can I Freeze These Pecan Bars?
Yes, these can be frozen individually or in the pan. Make sure they are wrapped in plastic wrap before freezing and you can freeze them for up to 2 months. To thaw, remove and put in the refrigerator or heat in a 300°F oven for about 20 minutes.

Pecan Pie Bars Made With Fresh Milled Flour
Ingredients
Shortbread Crust
- 226 grams butter, melted (2 sticks, can be salted or unsalted)
- 100 grams sugar (1 cup)
- 2 tsp vanilla extract
- 1/2 tsp salt
- 240 grams fresh milled soft white wheat flour (approx. 2 1/2 cups)
Filling
- 4 eggs
- 147 grams brown sugar (2/3 cup)
- 400 grams corn syrup or maple syrup (1 1/4 cup)
- 60 grams heavy whipping cream (1/4 cup)
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 48 grams fresh milled soft white wheat flour (approx. 1/2 cup)
- 1 1/2 cups coarsely chopped pecans
Instructions
For Crust
- Preheat the oven to 325℉ and line a glass 9×13 pan with parchment paper.
- In a medium bowl mix the melted butter, sugar, vanilla, and salt together. Stir in the flour until completely combined.
- Press dough evenly into the prepared pan. Bake 22-25 minutes until edges are lightly golden.
For Filling
- While the crust is baking make the filling. In a large bowl whisk the brown sugar, corn/maple syrup, heavy whipping cream, eggs, and vanilla until smooth.
- Next add in the flour and salt and whisk until combined. Stir in the pecans.
- When the crust is done remove from the oven and turn up the oven to 350℉.
- Pour the filling mixture over the hot crust and bake for 30-35 minutes until the center is set and the edges are golden.
- Cool completely before slicing.

I can’t tell you how many times I’ve made these now. And it’s always a double batch when I do. I’m not a pecan pie fan but I’m sure as heck a pecan pie BAR fan. The texture of these are just perfection with the shortbread crust.
