Pumpkin Flax Homemade Granola

This homemade granola is easy and can be a healthy replacement for breakfast cereals! You can make it your own by swapping out for other add-ins, too!

Ingredients
  

  • cups rolled oats if using a Flaker: flake 1¾ cups oat groats for this.
  • ½ cup coconut flakes I used fine shredded. You can use whatever you prefer.
  • 1 cup raw pumpkin seeds
  • ¼ cup flax seeds
  • ¼ cup maple syrup
  • ¼ cup honey
  • ¼ cup butter or coconut oil
  • ½ tsp salt
  • 2 tbsp chia seeds
  • 2 tsp cinnamon
  • 2 tsp vanilla extract

Method
 

  1. Preheat oven to 250℉ and line a baking sheet with parchment paper.
  2. Add all dry ingredients to a bowl and mix to combine.
  3. Melt butter/Coconut oil. Remove from heat and add syrup, honey, and vanilla extract.
  4. Pour wet mixture into the dry mixture and stir well until evenly combined.
  5. Spread onto baking sheet in an even layer. I like to press it down tight with a spatula.
  6. Bake for 1 hour and 15 minutes and remove from oven. It will get crunchy as it cools.
  7. Once cooled you can break apart and store in an airtight container.
