Preheat oven to 250℉ and line a baking sheet with parchment paper.
Add all dry ingredients to a bowl and mix to combine.
Melt butter/Coconut oil. Remove from heat and add syrup, honey, and vanilla extract.
Pour wet mixture into the dry mixture and stir well until evenly combined.
Spread onto baking sheet in an even layer. I like to press it down tight with a spatula.
Bake for 1 hour and 15 minutes and remove from oven. It will get crunchy as it cools.
Once cooled you can break apart and store in an airtight container.
