These easy crepes made with fresh milled flour are such a versatile dish! You can enjoy them for breakfast, lunch, or dessert! Enjoy them with Nutella and strawberries or stuff them with chicken and cheese. These crepes will bring a touch of sophistication and warmth to the table.

Fresh Milled Soft White Wheat Flour
Milk– Can use dairy or non-dairy.
Eggs
Butter

Vanilla Extract– Omit if making a savory crepe.

Preheat griddle to 300F.
I just used a 4 cup glass measuring cup to mill my flour into. Then I added all of the ingredients together and immersion blended them until smooth. The mixture will seem a little on the runny side, but it cooked up just fine. If you want to experiment and have a little thicker mixture play around with your flour amount.



Measure 1/4 cup of crepe mixture onto your griddle and tilt to spread the crepe thin. Cook it until you have a nice browned underside, then flip to finish. This one batch made 10 crepes with the 1/4 cup of mix per crepe. This could easily be doubled, tripled, etc. You can make these sweet or savory. My family enjoys sweet. Here are some sweet ideas: jam/jelly, butter, maple syrup, honey, peanut butter, mini marshmallows, chocolate chips, and whipped cream.

How To Store Crepes For Later

For longer storage, you can freeze them using the same method, where they can last for up to a month.
*You can also prepare your crepe batter the day or night before and let it rest in the fridge and cook as directed.
