1 cup fresh milled soft white wheat flour (about 1/2 cup wheat berries)
1 tsp. salt
1 Tbsp. Coconut Sugar
3 eggs
1 1/2 cups milk, dairy or non-dairy
2 Tbsp. melted butter (plus some for the pan)
Mill your soft white wheat.



Preheat griddle to 300F
I just used a 4 cup glass measuring cup to mill my flour into. Then I added all of the ingredients together and immersion blended them until smooth. The mixture will seem a little on the runny side, but it cooked up just fine. If you want to experiment and have a little thicker mixture play around with your flour amount.



Measure 1/4 cup of crepe mixture onto your griddle and tilt to spread the crepe thin. Cook it until you have a nice browned underside, then flip to finish. This one batch made 10 crepes with the 1/4 cup of mix per crepe. This could easily be doubled, tripled, etc. You can make these sweet or savory. My family enjoys sweet. Here are some sweet ideas: jam/jelly, butter, maple syrup, honey, peanut butter, mini marshmallows, chocolate chips, and whipped cream.
