Dumplings are the best way to turn any soup into a bowl of cozy, comfort soup. These easy einkorn drop dumplings are 3 ingredients and quick to add to any soup!
You can substitute any other fresh milled flour or all purpose flour for this recipe.
Growing up my mom would add these simple dumplings to chicken noodle soup. I don’t know why it took me so long to start adding them to my own soups because they are so simple and I haven’t met someone who doesn’t like a dumpling yet. I like to double the recipe so there are plenty of dumplings for eating and the leftovers.
What You’ll Need
Flour: I used fresh milled einkorn flour that I milled with my KomoMio Mill. I’ve used hard white wheat, hard white wheat, and regular all purpose flour to make these. I milled 95g einkorn wheat berries (about 1/2 cup) for 1 cup of flour.
Eggs
Salt: This is great for flavor, but if you need to leave it out, that’s okay too!
Small Mixing Bowl
I like to just whisk my eggs with a fork in the bowl and mill my pre-weighed wheat berries directly into that and add the salt and they’re ready to drop into your boiling soup! Mix until combined, but don’t over-mix or they’ll be more dense.
A good tip for dropping the batter into soup is dipping a metal spoon into your simmering soup, scooping up the batter, and dunking it in the soup. If you’re quick it should slide right off. It may stick a little, but that’s okay.

Easy Einkorn Drop Dumplings
Equipment
- Mixing Bowl I just use a regular cereal bowl.
Ingredients
- 2 Eggs
- 1 cup flour I used einkorn, but any flour should work. For fresh milled I used 95 grams (1/2 cup) wheat berries for 1 cup of flour.
- 1/2 tsp salt
Instructions
- Use a fork and whisk your eggs.
- Mix in flour and salt until combined. Don't overmix.
- Drop dumplings into boiling soup. I wait to add at the very end when the soup is done.
- Cook covered for 3 minutes.
- Serve.

I have not tried these but I know they will be good. I am Hungarian and we call them Nokedli. I normally use all purpose flour but I want to use with einkorn for the added nutrition. I rated this a 5 because I want to thank you for posting this! Such an easy recipe. There is such a thing as a Nokedli maker. But a large holed trainer or colander works well with a spatula to get them done quick! Thanks again!
